Eggs In A Basket


Eggs on toast is boring. Why not spice it up with this recipe?

What is it? It's pan-toasted bread with butter and an egg. What's so special about it? The egg is sitting comfortably in the middle of the bread.

If you're a movie fan like me, you'd recall that this recipe was featured in V for Vendetta.

You know the phrase "men who can cook are sexy"? ...I have mixed feelings about this one.

Ingredients

  • 1 slice of white bread. Thickly sliced bread works really well with this recipe.
  • 2 tbsp butter, or more
  • 1 small/medium sized egg
  • a bit of oil (I used olive oil)
  • a round cookie-cutter between 2-3" in diameter (the size is up to your preference)

Instructions



1. First, get out your pan... it works best if you're working with a non-stick pan. Or else you're going to have a lot of trouble with this one!


2. Put a bit of oil and some butter in (the oil keeps the butter from burning)


3. Get out your cookie-cutter, cut a hole in the middle of a slice of bread and fry it in the pan on medium-high heat, careful not to burn the bread. Keep moving it with your spatula.


4. Add more butter if you like, and keep on checking once in a while to see how brown you want one side to be. Once its done, flip it over!


5. Quickly dab some butter in the middle of the hole and fry the bread more. Put some butter around the edges if you fancy more butter. Make sure you don't leave the bread to fry long, this is important!


6. After the butter has melted, quickly but carefully break an egg in the hole. You can cut off any egg spilling off the sides if you'd like. Leave the egg to cook until the egg inside of the hole is half-cooked and fit to be turned over. (or else the egg will spill!)


7. When it is cooked to your liking, quickly flip it over and let it cook slightly on that side.

And ta-dahhh!


Best served when it is right out of the pan. The fallback of this dish is that it doesn't taste nice when it's soggy, so do serve it right after cooking it.

You can experiment with the size of the cookie cutter - a bigger one means more egg and less bread, and a small one means more bread and less egg.
