Ingredients:
- 500g sirloin or tenderloin beef (cut into half-inch strips)
- 1/3 cup shallots or onions
- 300g mushroom (any kind, button mushrooms or cremini are good)
- Salt and pepper to taste
- 1/8 tsp nutmeg
- 2 tsp of chopped fresh tarragon (or 1/2 tsp of dried tarragon works too!)
- 1 cup of sour cream
- 6tbsp butter (or more, if you fancy that!)
- Cooking oil
So let's get to it!! :)
Pour some oil in a skillet and put in about 2 to 3 tbsp of butter. Have the pan hot enough to brown and cook the beef fairly quickly, but not hot enough to burn the butter.
!!yes butter can burn so please be careful when you're frying with butter!!
You may have to do it in batches. Add salt to the beef as you are frying it. After the beef is cooked, set it all aside in a bowl.
In the same pan, reduce the heat a little to a medium and fry the shallots/onions. Fry it for about two or three minutes, and allow it to soak up all of the taaaaasssssty beef drippings that's in the pan! Set aside in the same bowl that has the beef. (important! because this way it kinda give the beef some flavour as well, while you cook the rest of the ingredients)
In the same pan, melt another 3 tbsp of butter. Have the heat to a medium high and put in the mushrooms and let it cook for about 3 or 4 minutes, until you can see it's starting to soften.
Add the nutmeg and tarragon while stirring.
Reduce the heat to low and add the sour cream (because sour cream will curdle if it is too hot I guess) and don't let it simmer either!
Stir everything up well. You might want to put 1/4 cup water to thin the sauce, it depends on you.
Stir in the beef and shallots/onions, and add salt and pepper to taste.
Serve over your choice of rice, fettuccine, egg noodles or even potatoes.
